I love making pancakes and experimenting with different ingredients, such as bananas, coconut flour, almond flour and protein powder.
From my many experimentations over the years, I’ve combined this list of recipes you can try, that are easy and delicious!
1. Protein Pancakes
These cinnamon and vanilla pancakes are great to have as a post-workout meal.
Ingredients:
- 2 scoops of vanilla protein powder (I use MyProtein Impact Whey.)
- 2 eggs.
- 1/2 cup of milk.
- 1/3 tsp of baking powder.
- 1 tsp ground cinnamon
- 1 tsp of vanilla essence.
- 1 tsp of coconut oil for frying.
Method:
- Combine all ingredients until a smooth batter is formed.
- Heat up a pan, add in the coconut oil.
- Scoop 2 tablespoons of the mixture into the pan, cook on a medium heat until golden.
Topping suggestions:
- Banana and peanut butter.
- Syrup/honey.
- Greek Yogurt and a dollop of jam.
- A scoop of vanilla ice cream for a treat!
2. Banana & Cocoa
Banana pancakes are so easy to make and great if you want a low-carb/gluten free alternative.
Ingredients:
- 1 banana.
- 2 eggs.
- 1/3 tsp of baking powder.
- 1 tsp of cocoa powder.
- 1 tsp of coconut oil for frying.
Method:
- Mash banana in a bowl (I used a fork), until smooth or until very few lumps remain.
- Combine all other ingredients until a smooth batter is formed.
- Heat up a pan, add in the coconut oil.
- Scoop 2 tablespoons of the mixture into the pan, cook on a medium heat until golden.
Topping suggestions:
- Add chocolate chips to make this a real treat!
- Crushed walnuts (can be sprinkled into the batter prior to cooking.)
- Greek Yogurt and mixed seeds (such as sunflower or chia.)
3. Coconut & Almond
If you love coconut, you’ll love these!
Ingredients:
- 1 banana.
- 2 eggs.
- 6-7 tbsp of almond flour/meal.
- 3 tbsp desiccated coconut.
- 1/3 tsp of baking powder.
- 1 tsp of vanilla essence.
- 1 tsp of coconut oil for frying.
Method:
- Mash banana in a bowl (I used a fork), until smooth or until very few lumps remain.
- Combine all other ingredients until a smooth batter is formed.
- Heat up a pan, add in the coconut oil.
- Scoop 2 tablespoons of the mixture into the pan, cook on a medium heat until golden.
Topping suggestions:
- Blueberries (mix into the batter while cooking and the blueberries will be warm and gooey.)
- Honey/syrup.
- Warm raspberries and a sprinkle of coconut.
4. Classic Crepe
As it says, the crepe is a classic and you can’t go wrong with this simple recipe.
Ingredients:
- 2 eggs.
- 1 cup of flour (I like to use either regular whole purpose flour or a gluten free one.)
- A pinch of salt.
- 1 cup of milk.
- 1 tsp of coconut oil for frying.
Method:
- Sift the flour into a bowl with the pinch of salt and make a well in the middle.
- Add the milk and eggs into the middle and whisk together until a smooth batter is formed.
- Heat up a pan, add in the coconut oil.
- Scoop 2 tablespoons of the mixture into the pan or until it coats the base, then cook on a medium heat until golden.
Topping suggestions:
- Lemon and sugar.
- Nutella and Banana.
- Cinnamon and strawberries.
